Food Prep During Social Distancing

In our house, we’re trying to keep our routine as ‘normal’ as we can for our kids during this pandemic, and while so much seems out of our control right now, we can at least control what happens in our home.

In the early days of social isolation, and when it was technically their March Break week, we let the kids have fun and let the rules and routine slide: meals happened whenever everyone was hungry, and we didn’t necessarily focus on healthy meals, but rather fun meals.

Now though, with no end to all of this in sight and our girls obviously becoming stressed, we’ve tried to put small parts of their routine back in order. Sure, we’ve extended their bedtime at night and allowed them to sleep in every morning, and for the most part they have the day to relax and do whatever, but now we expect them to check in with their school lessons online every weekday, they are responsible for a few extra chores above and beyond their usual ones, and they are expected to help out at meal time. In fact, dinner has become something of a family affair now: the tv goes off and music goes on. At the sound of the music, the kids know it’s time to head to the kitchen to help. So far it’s working and it’s even fun (so far at least).

We’re down to the final two exams in our house this week and all of our energy is being directed to studying rather than making meals. So this weekends food prep was focused on quick and easy snack foods that would help keep us fueled and satisfied while we hit the books. I decided to switch up one of our favourite recipes this week and created these pizza quinoa bites.

Egg Bites: We’re Ready for Exam Week

Raise your hand if you survived another weekend of food prep! Now pat yourself on the back and congratulate yourself. Way to go!

This weekend was an extra long food prep session in our house: it’s exam week here for our oldest daughter, so I wanted to make sure the refrigerator was fully stocked with quick go-to grab items that would keep her going as she struggled with study time.

Meal Prep Sundays

Meal preparation, sometimes referred to as “meal prep”, is the preparation of meals for a period of time.

Along with my training and running schedule has come a few necessary additions to my routine: strength training, Pilates, and of course, meal prep.

Every Sunday I set aside a few hours to prepare food for the coming week. Honestly, my new schedule is too hectic not to. It’s either that or eat junk, and I’m not going through all this exercise and training to blow it all in the kitchen.

Today was the big reveal by runDisney of the 2019 Disney Wine & Dine Half Marathon Weekend medals! In case you missed it, you can see the medals and read the entire article on the Disney Parks Blog here.

This year marks the 10th anniversary of this event and I am so excited, both as a chef and as a runner, to be there. After an accident and having to cancel my solo trip back in the spring when I was supposed to run the Star Wars Rival Run Challenge, I have regrouped, healed and rescheduled my trip. I’m crazy excited for what will be both my first Wine & Dine runDisney event and my first 10k.
