Mincemeat Cookies (Gluten-Free)

These cookies are a delicious way to use up leftover holiday mincemeat.

Ingredients
  

  • 125 g butter softened
  • 100 g brown sugar
  • 50 g cane sugar
  • 1/2 tsp salt
  • 1 large egg
  • 1 tsp vanilla
  • 6 tbsp mincemeat
  • 220 g gluten-free flour I used Bob's Red Mill 1-to-1 Flour
  • 1/2 tsp baking soda

Method
 

  1. Preheat oven to 350 degrees.
  2. Line two cookies sheets with parchment paper. Set aside.
  3. In a large bowl, beat softened butter with brown sugar, cane sugar, and salt.
  4. Beat in egg, vanilla, and mincemeat.
  5. In a second bowl, combine flour and baking soda. Add to butter mixture and combine. Chill the dough for 20 minutes.
  6. Place tablespoons of dough onto baking sheets, leaving room for dough to spread.
  7. Bake 10-12 minutes or until lightly browned around the edges.
  8. Let stand for a few minutes. Transfer to a wire rack to cool.
