Gluten-Free Mincemeat Pancakes

A warm breakfast version of your favourite holiday tart.

Ingredients
  

  • 200 g gluten-free flour I used Bob's Red Mill 1-to-1 Baking Flour
  • 1.5 tsp baking powder gluten-free
  • 1 tbsp sugar
  • 3 large eggs
  • 2 tbsp melted butter
  • 200 ml milk
  • mincemeat Use your own or a gluten-free store brand
  • vegetable oil
  • toppings of choice

Method
 

  1. In a bowl, combine flour, baking powder, and sugar.
  2. In a second bowl, whisk eggs, melted butter, and milk.
  3. Add the egg mixture to the flour and stir until combined.
  4. Heat a pancake griddle or large frying pan. Add 1 tbsp of oil.
  5. Using a large spoon, add rounds of pancake batter to pan. Place a teaspoon of mincemeat into the center of each pancake and top with a little additional pancake batter to cover.
  6. Cook pancakes until golden brown on both sides. Serve.
