Gluten-free Butterscotch Apple Crisp
This perfect fall dessert gives the classic apple crisp a little twist you'll love. Serve warm with a splash of cream or with ice cream if desired.
- 5 large apples, peeled & sliced
- 1/2 cup brown sugar
- 1 cup gluten-free oats
- 3/4 cup gluten-free all-purpose flour *I used Bob's Red Mill 1 to 1 Baking Flour
- 1 tsp cinnamon, divided
- 1 tbsp baking powder
- 1 pkg butterscotch pudding mix (4 serving size)
- 1/2 cup unsalted butter, cubed
Preheat oven to 350 degrees.
Put apple slices in a greased 9-inch pie plate. Sprinkle with 1/2 tsp of cinnamon and toss to coat. Set aside.
In a large bowl, combine sugar, oats, flour, remaining 1/2 tsp cinnamon, baking powder, and dry pudding mix. Mix well.
Blend butter into oat mixture until mixture resembles coarse crumbs.
Sprinkle oat mixture over apples.
Bake 25-30 minutes. Serve warm.
